Itty Bitty Pizza Bites

These are by far our favorite pizzas.  And so easy to make.

 

What you need…

Pizza Sauce, but in all honesty, I’ve used Spaghetti also

Mozzarella Cheese, shredded – or a Pizza Blend of shredded cheese

Pepperoni slices or whatever pizza toppings you normally eat on pizza

Ritz Crackers – I’ve tried el cheapo brands before, they do not taste the same, and get soggy very quickly

On a pizza pan or cookie sheet, place Ritz Crackers – however many you want to eat.  Plan for more as they are addicting.

Put a dab of pizza sauce on each cracker, top with a slice of pepperoni and sprinkle with cheese.

Put in over on broil just until cheese melts/browns.  Seriously, it’s like one to two minutes is all.

Spinach and Artichoke Dip

The following recipe comes from Carrie’s friend, Calista.  Calista is a fun coworker, full-time student and young lady learning how to be more “womanly” through trial and error in the kitchen.

‎2 8oz packs of cream cheese (I used Neufchâtel Cheese instead for less fat)

1 clove garlic

1 tbsp chopped onion

10 oz of frozen spinach (i just used a whole 16 oz bag)

3/4 cup half and half (I used nonfat half and half)

1/2 cup grated Parmesan cheese

2/3 cup Monterrey jack or colby jack

1-13 oz can of artichoke hearts chopped

 Blend the half and half and cream cheese first, then pour the rest of the ingredients in and then put it in the crockpot on high for hour-hour and a half, or until warm 🙂
Serve with your favorite tortilla chips or warm breadsticks

Cheddar Biscuits

Here’s a recipe that tastes just like the biscuits you’d get at that really yummy lobster restaurant 😀

2 c. Bisquick baking mix

2/3 c. milk

1/2 c. shredded cheddar cheese (other kinds of cheese do not work well)

1/4 c. melted butter

1/4 t. garlic powder

Mix Bisquick, milk and cheese until soft dough forms; kneed for 30 seconds.  Drop dough by spoonfuls onto ungreased cookie sheet.

 

Bake 450* for 8-10 minutes.  Done when they are golden brown.

Mix butter and garlic and brush over warm bisquits before removing from cookie sheet.  Serve warm.

Makes 10-12 biscuits
