Menu Plan Monday – Lunchbox Edition

A few days ago I re-read a good post about making school lunch prep less stressful.  It was right in line with how I want my lunch prep to happen, although we’ve been slipping a little lately and I’ve been throwing together lunches while the kids are zipping coats in the morning.  I’ve also bee reading a series on goal setting, which is an area I could use some guidance in.  So, I’ve made it one of my weekly goals to get back on track with lunch prep this week.

As you may know, my intention is to have the children pack their own lunches in the evening so all we have to do each morning is grab a lunch bag, throw in the ice pack and head out the door.  Sadly, all my lunch prep areas are currently empty unless you count the crumbs that are gathering in the corners of the drawers.  My goal for the week is to get those drawers cleaned out and refilled with these healthy choices:

Protein:

Ham, Cheese, Peanut Butter for Sandwiches

Fruits & Vegetables:

Sliced Cucumbers, Bananas, Applesauce, Sliced Cucumbers, Baby Carrots

Grains:

Pretzels, Homemade Bread

That’s all we’re getting this week.  I’ll plan to build the choices back up in the coming weeks, but this is a good start.
