Spinach and Artichoke Dip

The following recipe comes from Carrie’s friend, Calista.  Calista is a fun coworker, full-time student and young lady learning how to be more “womanly” through trial and error in the kitchen.

‎2 8oz packs of cream cheese (I used Neufchâtel Cheese instead for less fat)

1 clove garlic

1 tbsp chopped onion

10 oz of frozen spinach (i just used a whole 16 oz bag)

3/4 cup half and half (I used nonfat half and half)

1/2 cup grated Parmesan cheese

2/3 cup Monterrey jack or colby jack

1-13 oz can of artichoke hearts chopped

 Blend the half and half and cream cheese first, then pour the rest of the ingredients in and then put it in the crockpot on high for hour-hour and a half, or until warm 🙂
Serve with your favorite tortilla chips or warm breadsticks
